Lavish – Vegetable Soup.

A true classic my Lavish – Vegetable Soup, full of flavours and calories. Creating this recipe, one autumn day a couple of years ago by accident. Surprisingly the family all love this soup, saying “its like a big hug in a bowl”. This is great soup, that I   always make on Christmas morning, it’s a great substitute if someone does not like the main starters I am serving.
This is an easy recipe to follow, that you can change to suit yourself for a more healthy option. I like to buy all my fresh vegetables from Barleylands Farm Shop.

  • Chop up the vegetables, finally as possible, mix them together into a large bowl, (you can cheat by getting a chopped up bag of veg from a supermarket).
  • Chop up the parsley.
  • Boil the Kettle, and pour 8 pints of boiled water, into a medium-sized saucepan.
  • Turn on the hob to medium heat.
  • Two pinches of salt.

  • Add vegetable stock to the boiled water.
  • Stirring the water until the vegetable stock is dissolved.
  • Add a handful of parsley and stir into soup.
  • Place a lid on the saucepan and let it simmer for 10 mins.
  • Soup should be bubbling, when lifting the lid.
  • Add the butter stir until dissolved.
  • Add 100ml single cream.
  • Stir a couple of more times mixing everything together.
  • 3 pinches of pepper.
  • 2 pinches of salt.
  • Place the lid back onto the saucepan, cook on medium heat for a further 20 mins.

Lavish Vegetable Soup

  • The vegetables should be soft now.
  • Turn of the Hob.
  • Allow to cooling for 15 – 20 mins.
  • Using a blender of your choice, blend the vegetables together in the saucepan.
  • Stop blending when the soup is a creamy texture.
  • Place the lid back onto the saucepan, and leave on the hob. Until you are ready to serve.

Lavish Vegetable Soup

Reheat soup when you are ready to serve, making sure it’s piping hot. Grabbing a bowl place on a chopping board with fresh crusty bread and butter, plus a soup spoon. Pour the Lavish Vegetable Soup into the bowl, and the final touch a pinch or two of pepper.
