Hello Lovely,
So another delightful week has passed on The 1-1 Diet – Week Two. And I am soo, proud of my results, losing another five pounds and one inch of my bust waist and hips. That’s eight pounds undoubtedly lost in 2 weeks and over 11 inches gone from my body. Of course, the diet is hard! But I am eagerly looking at The 1-1 Diet – Week Two, as a lifestyle change.

The 1-1 Diet - Week Two

I undoubtedly have ALWAYS BATTLED with my weight from a young age. I chopped and changed diets for all my teens and early 20’s. I naturally had a social circle of friends who were always in my eyes smaller than me. Looking back, I wasn’t as big as I naturally thought but my mindset towards myself was not in the best place!
In my early 20’s I had my first baby, a beautiful girl, I gained a lot of weight in my pregnancy and then used her hospital stay in intensive care to turn to food for comfortI gained a lot of weightI truly lost touch with myself and didn’t recognise the girl in the mirrorMy love of fashion disappeared because I couldn’t find any nice clothes to fit my new unwanted size.
The 1-1 Diet - Week Two
Rolling in nearly 2 years with hardly any photos of me and my baby, I had enough of feeling unhealthy, looking older than I was, wearing clothes that didn’t show my personality, crying in the mirror and avoiding social events. A time stands out in my mind. Where I sat in a mirror before a family day.I was attending and physically cutting the clothes off my body because I hated what I saw!
This was a turning point for me where I decided to join CWPI searched online for a consultant and gained two. They were AMAZING! I did lose weight successfully, not as much as I had planned as I had to stop because I then had baby no.2.

This pregnancy was used as an excuse to eat heartily everything and anything I naturally wanted! I had a baby to feed right? The pregnancy was complicated enough, and the ultimate stress naturally led me to eat more, again for comfortI ballooned. When my son was born, he too had complications and I have turned to food yet again for comfort. This time I became the biggest I had ever been in my life. In just 4 months I contacted my consultants to join the plan I was determined to lose weight and keep it off this time.

My main reason why was to promptly break the cycle I didn’t want my dear children naturally following the same footsteps as me.I have lost six stones and the rest is history! Losing weight has instantly changed my life in more than one way! I have re-found my love for fashion and take pride in how I lookedMy confidence and self-belief have grown so much, and I use my remarkable journey to help others believe in themselves too! I can be the role model to my dear children. Wanting them to understand that healthy eating is easy. Never wanting them to go through what I have been through in my life. As for photos I am now always in them!

Losing weight also allowed me to instantly become a consultant running my own business and giving me the opportunity to get out of a job I dislikedI can use my story to change people’s lives, and that is an amazing feeling for me. Dearly loving what I do, and it is all thanks to, The 1:1 Diet by Cambridge Weight Plan.

The 1-1 Diet - Week Two

Lunching with friends

Please don’t shy away from the world! And if you get invited out to lunch with friends. There is no reason why you can not attend. Just take a bar with you and order a bottle of water and a black coffee or tea. If you still want to eat something then order yourself two hard-boiled eggs. This will surprise you on how full you feel.

 

Healthy Recipes: Spanish Chicken Casserole.

Serves: 2

Prep Time: 5 minutes.
Cook Time: 25 minutes.
Calories: 400
Steps: 3, 4 and 5

 

Ingredients
  • Spray Oil
  • 2 garlic cloves, crushed.
  • 1 large onion diced.
  • 1 red pepper, deseeded and thinly sliced
  • 1 yellow pepper, as above
  • 175g mushrooms sliced.
  • 25-g skinned chicken fillets, cut into chunks.
  • 1 tsp paprika
  • 200ml chicken stock
  • 1 x 400 can chopped tomatoes.
  • 2 tbsp of tomato paste.
  • A few sprigs thyme.
  • 2 small courgettes
  • 8 black olives
  • A small bunch of parsley, chopped
  • Salt and black pepper.

Directions

  1.  Lightly spray a saucepan with the oil and place onto a low heat. Cook the onion, garlic and peppers. For 6 – 8 minutes.
  2. Throw in the mushrooms and chicken and cook for a further 5 minutes. Until chicken is browned.
  3. Add the paprika and cook for 1 minute. Pour in the stock and stir in the tomatoes and the tomato paste plus the thyme.
  4. Bring to the boil, lower the heat and shimmer, add the courgettes. Cook for 30 minutes Stir in the olives.
  5. Enjoy.
